Look at all of these veggies!

Grill zucchini, peppers, onions, veggie sausage. Add to scrambled egg whites and a tortilla, top with picante sauce, greek yogurt and hot sauce.

    Amy, that looks awesome…restaurant quality! What brand of veggie sausage do you use and, more importantly, how close is it to tasting like the real deal?

    I think it was Morning Star Farms - sausage patties. defrost, chop and add into the mix on the griddle. I think it is pretty good - not greasy like real sausage.

    Oh, and I almost forgot - once you roll everything up in the tortilla, put it in a 375 degree oven for 10 minutes or so - just until it gets slightly crispy. mmmmm.
