These are so delicious and couldn’t be easier to make.

  • Wash, and cut off a little bit of the bottom.
  • Toss with olive oil, salt and pepper.
  • Place in glass/pyrex casserole dish.
  • Cook at 375/400 degrees for 35-45 minutes, until tender.
  • Remove, and squeeze fresh lemon juice over and toss again.
  • Tip - if you cut the sprout first they will cook a bit faster - all depends on the size and how patient you are feeling.

Sweet Potato Fries! A favorite snack

Slice evenly, cook in 425 degree oven for 25- 40 minutes depending on fry thickness. I spray mine with Pam, and sprinkle cayenne pepper, paprika, salt and pepper.

Delicious and only 1 ww point for one sweet potato. I also use reduced sugar Heintz ketchup. Just watch the portion with ketchup - it can be a big calorie hit if you are not watching.

Corn Salsa, and anything…

This recipe was in last months Cooking Light. I have since made it 4 times. Of course I dont measure, but you can get the gist:

Time: 8 minutes, Servings: 2, WW Points: .5

Ingredients:

  • 1 t. olive oil
  • fresh corn off the cobb
  • fresh grape tomatoes
  • 2 shallots (finely chopped)
  • 1-2 T. fresh basil
  • 1 T. cider vinegar
  • salt/pepper

Heat olive oil, add shallots &  corn - cook for 5 minutes on med-hi. Toss in tomatoes for 2 minutes.

Remove from heat. Add chopped basil, cider vinegar and salt and pepper. Let cool. Eat alone as a side, or on anything!

I had mine on a meatless taco the other night! I used some sort of veggie crumble, seasons that and added all of the usual taco toppings.

Grilled Watermelon

Grilled Watermelon with Blueberries &  vanilla yogurt, lime and mint dressing!

I had never done this before, but kept hearing “grilled watermelon”, so I tried it. I cut big chunks of watermelon - say 3″ by 3″ - put them on the grill until they had grill marks on both sides. Then chopped into smaller cubes and chilled in the fridge.

Meanwhile I made the dressing:

  • 1 WW vanilla yogurt
  • Juice from half a lime
  • fresh chopped mint
  • dash of honey (optional, not necessary it is pretty sweet)

Then I combined and added fresh blueberries.

Delish… I have made a variation of this dessert every night since :)

Last night I grilled pineapple and added fresh blueberries and watermelon balls - not dressing  the juice from grilled pineapple is soooo sweet!

Snack on fruit, you cant go wrong. Usually you can consider 1 C of fruit about 1 ww point.

When I’m feeling “snacky”…

I have found that a club soda with fruit is one of my favorite ways to avoid snacking on things at night. I love it with limes, raspberries, blueberries, strawberries - you name it. Its good.

Use plenty of ice, and mash up the fruit on the bottom of the glass. It keep me entertained getting fruit out of my glass and it passes the time and helps me not let my “snacky” urge get the best of me!

This is a favorite, most delicious snack. These blackberries were amazing, parrano cheese (if you haven’t tried it yet, you should), raw almonds, ash rind goat cheese from a farmer here in Maryland, raw wildflower honey, and olives. MMMMM

Apples, Honey and Cheddar Cheese

Such a simple, healthy snack.

  • Granny Smith apple
  • 1T raw, organic, wildflower honey
  • 1/3 oz. aged white cheddar cheese. This cheese goes so well with these sour apples! MMMM

Tomatoes

This snack is so simple its kinda funny to bother posting, but Im going to anyhow…

K, so I just finished breakfast and sliced a tomato, but didn’t use the whole thing. So I sliced up what was leftover and added some salt and pepper. Let it sit for a little bit and viola! Yummy snack just like that. I spent a good bit of time in France and this is always a delicious snack there. You can eat the tomatoes like apples. They are just that good. I think in another month or two we will have tomatoes like that here too. Cant wait!
